BN TV: “Egusi is as Nigerian as they come” Watch Bukie make Egusi Soup on Bukie’s Kitchen Muse

Today on Bukie’s Kitchen Muse, we’re learning how Bukie makes her Egusi Soup. Here’s what she has to say,

“The other day I overheard Keri Hilson on Beat 99.9FM radio talking about her love for Nigerian food like Egusi Soup, Jollof rice, Eba etc. and I must say I was pleasantly surprised by her range – not musically now, but her level of awareness and appreciation of Nigerian or African food. After listening to her, however, I had the weirdest train of thought and I thought I’d share it as segue to today’s recipe.

Indulge me and let’s dream for a second.

If there was ever such a thing as the United Nations of Food where various dishes, soups or meals represented the interests of nations and people all over the world and we all had to vote for a representative for our individual countries, what dish, soup or meal will you vote for (feel free to put it in the comments below)? Well, I’ll place my lot on Egusi Soup to emerge with top votes to represent Nigeria’s interests. Lol. And I know what some of you thinking especially when Jollof Rice isn’t dead. Well, as it turns out, Jollof Rice might have a case of dual citizenship and Nigeria might run the risk of having to contend with the Senegalese or the Ghanaians if we were to lay claim to the origins of Jollof. However, Egusi is as Nigerian as they come and I’ll go out on a limb to say that it’s probably the most sampled Nigerian food by foreigners – after Jollof Rice no doubt.

So on today’s episode, all roads lead to Egusi land where I’ll be sharing with you my preferred Egusi Soup recipe and I hope you love it.”
