A Recipe for Tanzanian Mandi Rice (Smoked Rice & Chicken) by Aroma of Zanzibar on BN Cuisine
In this new video, Fathiya Ismail from Aroma of Zanzibar on YouTube shows us how to make Tanzanian Mandi Rice, which is smoked rice and chicken. Fathiya tells us the recipe originates from Yemen but it’s easy to do and anyone (of any nationality) can enjoy this meal.
She also shows us a homemade smoking system, using charcoal, an onion peel and a foil.
Ingredients
1 whole chicken or in half or leg quarters ( I used 5 leg qtrs)
Spices for the Chicken Marinade
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp cardamom powder
- 1-2 tsp salt ( enough to taste)
- 2 TBL melted butter
- 1/2 piece lemon
- 2 tsp fresh garlic ( crushed/mashed)
- 1 tsp fresh ginger ( or powder)
For the Rice
- 3 Cups long grain Basmati Rice ( washed, rinse and soaked for 30 mins)
- 4 1/2 Cups chicken broth or water ( For every cup of rice use 1 1/2 cup liquid)
- 3 TBL Ghee ( Clarified Butter) or olive oil or any cooking oil
- 1 Medium size onion – diced
- 8 count Black peppercorns
- 5 count Whole cloves
- 8-10 count whole green cardamoms
- 1-2 Cinnamon sticks
- 1 Bay leaf
- 2/ 3 green peppers
- Pinch of saffron for extra color
For Smoking
- 1 piece charcoal
- Onion peel
- 1/4 tsp ghee/clarified butter or cooking oil
