Mummy’s Yum: A Colourful Potato Meal for Your Child, A Recipe for Irish Potato Fish Pottage

This Irish Potato Fish Pottage is bursting with flavour and colours, which is one of the attractions for kids when eating. A colourful plate also connotes a healthy meal and that’s why we should always try and colour the kids plates with different vegetables.

With lots of fish, a good source of protein and ripe plantain added to this meal, it will surely be enjoyed even by a fussy eater. This is another way to use up your overripe plantain at home and also, our local spice is used in place of stock cube giving it an earthy delicious taste. You can blend this into a puree for a wholesome baby meal.

Ingredients:

  • 3 medium irish potatoes
  • 1 ripe or overripe plantain
  • 1 can Tuna chunks or you can make your flaked fish
  • 2 medium carrots
  • 1 cup peas
  • ¼ red bell pepper
  • 2 tbsps ground crayfish
  • 1 tbsp curry powder
  • ¼ of a thumb okpei/dawadawa/iru/locust beans (about ½ tsp)
  • 1 cooking spoon vegetable oil
  • Pepper (optional)
  • Water for cooking
