Here’s a Recipe for Carrot Rice with a Tanzanian Twist by Aroma of Zanzibar on BN Cuisine

Fathiya Ismail of Aroma of Zanzibar shares a recipe for carrot rice. See what you’ll need below below;

Ingredients
Serves 6

  • 1 ½ Cup Long Grain Rice (Washed, Rinse and Soaked for 20 mins)
    * For every cup of rice use 1 ½ cup liquid or as per the type of rice’s instruction.
  • ½ medium size (1/3 cup) white or yellow onion diced
  • 2 Cups Grated carrots
  • 2 ¼ cups liquid (water, or unsalted broth, or chicken bouillon)
  • 2 tsp salt (to taste)
  • 1 Cinnamon stick (optional)
  • 1 Star anise (optional)
  • 2 Tbl Ghee or melted Butter
  • Pinch of Saffron (optional)
