One of the most popular questions I get from fans about eating healthy in Nigeria centers how plausible it is especially when the average meal is already in itself high in carbs and calories. It’s tough, however, one of the reasons that I feel so passionate about my Alternative Food series is the fact that there are alternative ways of cooking and enjoying African food without being condemned to a life of salads, fruits and smoothies to stay healthy. One of such alternatives is the Cauliflower – which I think is my perfect alternative to rice. First and foremost, it is low in calories when compared to rice at about a ratio of 1:8 (Cauliflower: 25 Calories per cup; Brown Rice: 218 Calories per cup). It also tastes great and responds well under light seasoning.
