What do you do if you don’t have a rotisserie grill/oven like Mr Biggs and Chicken Republic and you are craving for that rotisserie effect in your peppered chicken? Chef Lola‘s got you covered. Try out this oven baked peppered chicken recipe and satisfy your cravings.

Ingredients For Spice Mix

  • 1/2 Tablespoon Thyme
  • 1/2 Tablespoon Curry Powder
  • 1/2 Tablespoon Black Pepper
  • 1/2 Tablespoon Salt
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Cayenne Pepper
  • 4 Stock Cubes

Ingredients For Spicy Sauce

  • 3/4 Cup Dried Chillies (unblended) or 5-6 Tbsp blended
  • 1 Cup Tomato Puree (Approx 225g)
  • 1 Medium Sized Onion
  • 3 Small Bay Leaves
  • 2 Tablespoon Ginger
  • 5 Tablespoons Oil

Ingredients For Chicken Brine

  • 3.5 lb Chicken Quarters
  • 9 Cups Water
  • 3 Tablespoons Water
