BN Cuisine with Chef Fregz: Mr Coconut Cookie

In this pursuit of fitness we still celebrate the little joys of life… like cookies. Cookies are one of the constant reminders that there is God in all that we do.

This week, I wanted something we could all quickly throw together and eat while catching up on our TV shows, or something you could make for the boo or kids or just for you. Yeah, these yummy coconut cookies came to mind.

During a conversation with one of my assistants the word cookie came up and we lost all sight of the things we seriously needed to attned to and proceeded to the kitchen to find out if we had enough flour, sugar and what not, to make it. During our search we found desiccated coconut and boom! We knew the flavour we were going to make.

But after deciding on the recipe we made a mistake. We added too much salt and thought, ‘well too bad! We are going to make it like that and add extra coconut to the top when it comes out warm. Hopefully, it would balance out. However when it came out of the Smart Oven it was like we tasted heaven! The salt and coconut tasted like salted caramel and if you know me you know I am always ready for that.

Our beautiful accidental recipe is below:

What You Need {Makes average 22 cookies depending on size}
1 cup sugar
125g butter
1 egg
2 cups flour
3 teaspoons baking powder
1 teaspoon salt (we heaped the measuring spoon hence the good mistake)
1 cup unsweetened desiccated coconut (plus extra for topping)

How To
Start by preheating the oven to 200 degrees Celsius.

In a bowl sift in the flour then add the baking powder and salt to the flour.

In a separate bowl, cream the butter and sugar together until pale and creamy. This took about 8 minutes by hand. You could speed up with a hand mixer but that good arm exercise isn’t too bad. Throw in the egg and mix until combined.

You want to carefully fold in the flour mix and coconut. Do this in two or three stages. The batter will be dry and flaky.

Form into small balls or whatever size you prefer, Because we baked them in our Smart Oven, it made sense to use smaller balls. You can make jumbo cookies but they need to cook a little longer.
IMG_6326 IMG_6327Flatten with your hands and place on a greased baking tray.
Bake for 12 minutes until just starting to turn golden on the edges. Take out from the oven and sprinkle the extra coconut.

Cool slightly in the pan , then transfer to a rack to cool completely. We didn’t wait this long because…human beings with zero willpower.Yes it was amazing warm!2015-02-06 15.19.30

When cool, place in an airtight container and when ready to eat serve as you like.
